Lunchboxes (bigger pictures)

Some lunch boxes from last week.
Brown seasoned rice, pineapple / mango mix, salad sprouts, onion curry relish in the lil' red container(link to recipe), and What a Dahl (slow cooker recipe).

A sandwich on homemade bread maker machine bread with sprouts currants and soy cream cheese spread, Dreena's earthy lentil stew, apples with currants (home canned from our apple tree) and stevia sweetened plain soy yogurt with a saran wrap plastic cover.

To answer Midwest Vegan's question from my previous blog entry I noticed last week that sometimes my salad juices would leak in side the box a little because only one container has a lid. I'm still loving it anyway, I just put a little plastic over some things now but not everything needs this (like the sandwich) because the food stays in place even while carrying it strapped to your shoulder.

I liked this one a lot. 3 small Dreena pumpkin seed coated lentil patties (home made rhubarb chutney in the small red container), romaine salad with a few extra pumpkin seeds and craisins, Sweet potato mashed with cinnamon and stevia, and 2 squared dark vegan chocolate (yum!).

I now have a coffee pot at my desk at work that I keep hot water in. A cup of hot herbal tea after my yummy munches is a wonderful treat.

What colorful feasts! I wish I had answers to your question in the previous post. It seems like that is really the million dollar question and there are thousands of cookbooks written on the subject of quick and easy dinners. Unfortunately, most of them aren't vegan and aren't very healthy. I think right now, any slow cooker recipe is going to be your best bet. Also, if you like salads, one thing I've found helps me is to take one day and get all the veggies chopped and the lettuce washed and thoroughly dried. I then combine them every night (as lettuce with veggies tends to get soggy after a while). Also, if you could spare one day, you could try to do a big batch of freezer cooking.

Dori, I often wish your photos were bigger so I could see the food better.

Oh rhubarb - I dreamt of rhubarb the other night. I want some in my yard so badly! I know someone who says they can try and start some from seed for me, but I feel like I may end up resorting to mail order. How did you get your rhubarb (assuming you grew it yourself)?

Now I can say, the sandwich looks yummy! I tried the vegan cream cheese and just never got used to it, but it hasn't been that long so I should try again. My favorite sandwich was cream cheese/tomato/cuke/sprouts on mutigrain bread. I miss it. Not that I can eat tomatos right now, but someday I will be able to again...

VV- Thanks for the comment on meal planning. Having the fresh veggies washed and ready to serve would be a time saver and I think you are right about the slow cooker, it probably is going to become a good friend. I am making some red beans in it right now.

erica - glad you liked the larger pictures. :) I did grow my own rhubard and started the plants using rhubard roots which gave me some rhubarb to harvest the first year. It would take forever to get some rhubarb if you started with seeds (it would in my midwest area anyway). The plants will seed themself after that. I love rhubarb too. I tried the chutney I ate last week for the first time this year. I do like the recipe alot and will probably make more next year.

My family (well a large part of it anyway) lives in Iowa, near the town of Newton. I don't get out to see them often, but I named my kitty "Newton" in their honor.

For some reason my favorite thing in this entry is probably the easiest one.. I'm liking that sandwich in the middle picture haha. I don't know what it is about it.
Everybody is getting these lunch boxes lately.. I wish I could afford one! The way my schedule is set up this semester I have to pack my lunch every day!
