A Picnic in France

Virgine from the Absolute Green Blog is hosting a "Pic" nic with all the fixings due her by August 2nd. I saw this and said to myself, I'm there. This is the only I opportunity I forsee in my near future of having a "pic" nic in France so I'll take what I can get.

I am bringing my wonderful
NEW POTATO SALAD
Cook 2 1/2 lb's of new potatoes with skins on and allow to cool. I did mine in a crockpot on low overnight until they were forkable, but not easily mashed.

When cool dice the potatoes 1/4" cubes. I use a Le Press food press (shown in picture #1). Mix the cold potatoe cubes with the following:

1 C shredded green zucchini
1/2 C diced red pepper
1/4 pickle relish (sweet or dill, your choice)
1 Tbsp nutritional yeast flakes
1 tsp sea salt
1/4 C sweetener of choice (I used 1/4 tsp KAL stevia extract powder)
1/2 C commercially prepared Nayonaisse: Dijon Style (Mustard / Mayo Mix)

Mix and chill until serving.

Hi! Vicki, the potatoes need water enough to cover. I actually usually don't weigh my potatoes, I just fill my 3 quart oval crockpot full of them and covered with water PLUS I like to add salt while cooking... I added about 1 1/2 Tbsp to my cooking water.

For this recipe I used some of the cooked potatoes, but leftover potatoes are nice to have around. I made fried potatoes and rosemary potatoes with the leftovers.

Thank you Dori for your contribution. I've never thought about making a sweet and salted potatoes salad. A very great idea. If you like I can translate it in french too.

Yum, I love potato salad! But only if I make it myself, I don’t like a lot of things that people tend to put in potato salad like raw onions, celery and pickley things. This recipe looks good to me though, minus the pickle relish. I never thought of putting zucchini in potato salad, bet it’s delish!
